A complex, creamy traditional clothbound farmhouse cheddar from the legendary Mary Quicke. Matured for 12 months, it offers outstanding depth of flavour.
Being the most famous cheese in Quicke's range, this Traditional Mature Cheddar is made by slowly maturing a muslin-wrapped truckle for a year. The muslin allows it to breathe and mature producing a beautiful rinded cheese with a unique and complex flavour. Each truckle of cheese is turned daily as they mature, to guarantee consistency of flavour. Simply a very lovely farmhouse cheddar.
