These delicious eggs are made in France with a buttery salted caramel ganache, and the use of a touch of 'fleur de sel' salt in the caramel intensifies the flavour.

Successfully reintroduced to Britain in the 19th century, this secretive bird has survived in what remains of our native pine forest, mainly in Scotland. The male Capercaillie has a prolonged croaking song that accelerates rapidly followed by a cork-popping sound and hissing and gurgling noises thereafter! A bird that goes to those sorts of lengths to bring attention to himself had to be part of this collection!
