A creamy and textured raw milk blue from the Welbeck Estate. Stichelton British Blue Cheese can exhibit a multitude of long lasting flavours ranging from green apples to beef stock. It has a juicy acidity and toasty, biscuity notes towards the rind.
It is really interesting to taste the different parts of the Stichelton separately: the plain white part, the creamy part just next to the blue, the blue itself, the creamy part just under the rind (and if you can find them, the little amber beads of ‘nectar’ that can reside there).
Made on the edge of the famous Sherwood Forest by Randolph Hodgson and Joe Schneider, this game changing blue is the only one made with raw milk and is made with the 18 year old culture MT36. A strong cheese with a deep red rind, this cheese is unique in many ways but each part from rind to centre has a different taste profile, truly stunning.
