Our Story
Palace Culture got its start in the Parmigiani family kitchen in Crystal Palace. Due to his 4 year old son’s dairy intolerance, Mirko Parmigiani made it his mission to create a delicious dairy-free cheese for the family to enjoy. Combining his love for flavour with a deep passion for health and sustainability, he began making nut-based cheeses using raw and local ingredients. The resulting product was a huge success! And soon enough word of these nutty cheeses quickly spread throughout Crystal Palace. This led to Palace Culture’s first stall at Crystal Palace farmers’ market.
As business grew to additional shops and markets, Mirko recognized that nuts could not be fermented all throughout his family's flat. So he took production out of his home to a railway arch in the food hub of Bermondsey. This is where Palace Culture creates our cheeses today!
Using organic cashews and almonds, we soak our nuts in filtered water before fermenting them with live cultures. This gut-healthy base is then combined with sea salt and a mix of herbs and spices to create a flavour packed product. From tasty cream cheese spreads, to soft and hard cheeses that have been aged over months, we have products for every charcuterie board.
We source our organic cashews and almonds from small producers and direct from the source. It's sustainable and ethically sourced, making sure farmers are fairly treated. Organic means we get no pesticides on the nuts and follow strict measures to make sure our customers get the purest natural product.
